Louise’s recipe of the week: Shortbread  

Welcome to my first blog for Millers64. Each month I will be discussing various subjects. This month is my shortbread recipe.

In your room on arrival there will be a jar of homemade shortbread which is refilled daily. It is a real winner with our guests.
I have Delia Smith to thank for the original recipe

6oz butter
3oz caster sugar
6oz plain flour
3oz fine semolina

Preheat oven to gas Mark 2 300f 150c
Line a baking sheet with grease proof paper

First of all beat the butter in a bowl with a wooden spoon to soften it then beat in the sugar followed by the flour and semolina. Work in the ingredients with spoon finish off with your hands.
Transfer the dough to a floured surface and roll to a round 1cm thick and using a cutter of your choice cut out your biscuits.

    Thank you for this. I have happy memories of skipping dessert in order to eat all the shortbread on return in the evening.
